Filipino-American Social Networking

as i search for recipes over the net, i'm seeing lots of variations with every dish. we are so diverse as a nation that one region's adobo is totally different than adobo from fifteen miles (or i should say fifteen kilometers, since they're on the metric system) away . so i got to thinking about how complicated it was to make filipino food.. so i wanted to post a question for those who don't necessarily cook filipino food but still eat the hell out of it. and my question is, what are some complaints you have about filipino food in general? for example, do you think that it takes too long to make, or that it's too fatty?
